Chewy Chocolate Chip Cookie

The Chocolate Chip Cookie has been the favorite cookie by a wide margin in America for a very long time. The perfect texture and sweet, yet balanced flavor satisfy consumers of all ages. While the versatile base and adaptability of this cookie dough have intrigued bakers for decades. The popularity of this cookie has led to many interesting and delicious ways of eating it. Perhaps the most well-liked of these means of consuming Chocolate Chip Cookies is in Ice Cream Sandwiches.


Chewy Chocolate Chip Ice Cream Sandwich


What you will need:

You'll need freezer space and a sealable bag as well as:

Your choice of ice cream (see choosing your ice cream)


How to Make it:


1.) To make an ice cream sandwich first freeze two Chewy Chocolate Chip cookies until frozen. Simply put the whole cookie, still in its airtight package into the freezer. They are large cookies so freeze for at least 1 hour.


2.) Once the cookies are frozen, take them out of the freezer, remove the packaging, and place face-down on a clean work service. Open the ice cream you have chosen and scoop a generous portion onto the bottom side of one of the cookies (we usually aim for the ice cream to be somewhere between the thickness of one or two of the cookies we are using).

If the ice cream is soft, simply place the other cookie so that the bottom side is facing the ice cream on top of your sandwich and gently press down till the ice cream has spread out to approximately the size of the cookies. If the ice cream is hard you may have to spread the ice cream over the first cookie by hand before placing the second cookie - bottom side facing the ice cream - on top.

Note: This step should be done as quickly as possible to minimize the thawing of the ice cream!



3.) Put the ice cream sandwich into a bag (you may use plastic wrap or a small, unsealed bag if freezing for only a day or two before eating or place into a sealed bag such as a Ziplock for longer lasting taste). Put the sandwich in its bag back into the freezer.


4.) Once the sandwich has been re-frozen (usually within a few hours - check the firmness of the ice cream to tell when it's ready. When using a large Red Door Bakery Cookie wait till the ice cream is very solid so that the ice cream does not squish out when being eaten) it's time to serve it up!

Tip: When using large Red Door Bakery cookies, we recommend cutting your sandwich into fourths to serve.


Choosing Your Ice Cream

Different flavored ice creams give you endless possibilities of flavor varieties with the same cookie. Vanilla ice cream is what we have pictured in this post, but the options are limitless!

Vanilla is obviously a common and very delicious pairing with chocolate chip cookies, but you could also try other ice cream flavors such as nutty ice creams like praline pecan or butter pecan, chocolate ice creams also go well with chocolate chip cookies, or you can get creative and adventurous with mint or fruity ice creams! The bottom line is that there is no right or wrong it really depends on what you and your family and friends like. We do recommend testing new ice cream flavors with a small part of a cookie to see how you like it before making a whole cookie sandwich out of it.
